Caesar Salad Pizza

Two classics combined into one delicious bite! A grain-free and fat-free pizza base made with sweet potatoes or potatoes and cassava topped with crunchy romaine and juicy cherry tomatoes tossed in a delicious, creamy cashew Caesar salad dressing. This recipe is a great way to get more salad into your children in a fun way.

Lettuce (especially butter leaf and romaine) stimulates peristaltic action in the intestinal tract and helps cleanse viruses from the liver and lymphatic system. Lettuce is also blood cleansing and blood building.

Tomatoes contain their own variety of vitamin C that’s bioavailable to the lymphatic system and liver, supporting the immune system to keep it strong against pathogens.

Sweet potatoes help cleanse and detox the liver from viral byproduct and toxins and help nourish the skin and support the adrenal glands.

Caesar Salad Pizza

Ingredients:

Pizza dough:

  • 2 cups diced peeled sweet potatoes or potatoes
  • ¾-1 cup cassava flour, more if needed
  • 1 tsp garlic powder
  • 1 tsp dried oregano

Salad dressing:

  • ⅓ cup raw cashews
  • ⅓ cup water
  • 2 tbsps freshly squeezed lemon juice
  • 1 garlic clove
  • ½ tsp dried parsley
  • ½ tsp mustard powder
  • 1 tsp onion powder
  • Sea salt, to taste (optional)

Salad:

  • 1 medium-sized romaine lettuce (about 4 cups chopped)
  • ½ cup halved cherry tomatoes

Directions:

Place the diced sweet potato or potato in a steaming basket set over boiling water. Steam for 15 to 20 minutes, until tender when pierced with a fork. Remove and set aside until cool.

When cool, place the steamed sweet potato or potato in a bowl and mash until smooth. Add the cassava flour, garlic powder and dried oregano. Knead with your hands until you get a soft, smooth dough, adding more flour as needed. Be careful not to add too much flour or the pizza base will get tough.

Preheat oven to 350°F/180°C. Line a large baking tray with parchment paper. Roll out the dough on a lightly floured surface or in between two sheets of parchment paper. If the dough breaks, press it together again. Place the pizza base on the baking tray and prick with a fork. Bake for 10 to 20 minutes, until firm and lightly browned on the edges.

While the pizza base cooks, combine all the salad dressing ingredients in a high-speed blender and blend until smooth.

Combine the chopped romaine lettuce and cherry tomatoes in a large bowl. Pour the salad dressing on top and toss until evenly coated.

When the pizza base is cooked, set it aside to cool for 5 minutes before adding the salad on top. Serve immediately. Enjoy!
