Cauliflower Potato Mash

Mashed potatoes are a beloved comfort food for many people. Thankfully, you can enjoy them—without the butter or milk—and still help yourself heal! In this recipe, the potatoes are joined by cauliflower to make a creamy and nutrient-rich mash. This recipe comes from the Revised and Expanded Edition of Medical Medium.

Cauliflower contains the trace mineral boron, which is known to help the endocrine system—and yet cauliflower gets more attention for the so-called goitrogens it contains. Cauliflower does the very opposite of what the hype says—it helps the thyroid and the rest of the endocrine system (including the hypothalamus and adrenal glands) to stave off the pathogens that are truly behind issues such as thyroiditis.

Cauliflower Potato Mash

Ingredients:

  • 4-5 medium-sized potatoes, peeled and roughly chopped
  • 1 small head of cauliflower, cut into large florets
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tbsp chopped chives, parsley, or green onions, to serve
  • 1/2 tsp paprika, to serve

Directions:

Add 3 inches of water to a medium-sized pot, bring it to a boil, and add a steaming basket. Place the potatoes and cauliflower florets in the basket, cover, and steam for 15-20 minutes, until both are very tender. Remove the potatoes and cauliflower and place them in a large bowl or pot. Add the garlic powder and onion powder. Mash until smooth using an immersion blender or potato masher. Serve topped with chives, parsley, or green onions, and paprika.

Serves 2-3

Tips:

  • There are many nutrients in the skin of potatoes, so the potatoes don’t have to be peeled before mashing. However, if you want to achieve the look of traditional mashed potato, then peeling the potatoes will provide that.
