Fat-Free Gingerbread Cake

Fill your home with the enticing aroma of warming spices such as ginger, cinnamon, cardamom, and nutmeg, while filling your tummy with their incredible flavor with this scrumptious gingerbread cake. This is a fun recipe to make to serve at a holiday gathering such as Christmas, if you don’t want to make gingerbread men and houses but want to capture the delicious spice flavors!

Ginger helps with nutrient assimilation and relieves spasms associated with viruses and an overabundance of stress.

Cardamom increases bile production and brings life and beneficial, nontoxic heat back to stagnant, sluggish livers that have overheated for years and are now cooling down.

Fat-Free Gingerbread Cake

Ingredients:

  • 2 cups gluten-free oat flour
  • 1 cup brown rice flour
  • 1 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 ½ tsp ground cinnamon
  • 1 ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cardamom
  • 1 ¼ cup water
  • ½ cup unsweetened applesauce
  • 3-4 tbsp pure maple syrup, for glazing
  • ¼ cup pomegranate arils, to serve (optional)

Directions:

Preheat your oven to 350°F (180C). Line a 9-inch brownie pan with parchment paper.

In a large mixing bowl, combine gluten-free oat flour, brown rice flour, coconut sugar, baking powder, baking soda, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and ground cardamom. Mix well to ensure even distribution of the dry ingredients.

In a separate bowl, mix water and unsweetened applesauce. Stir until well combined.

Gradually add the wet ingredients to the dry ingredients, stirring continuously to avoid lumps. Mix until you achieve a smooth batter.

Pour the batter into the prepared 9-inch baking pan. Smooth the top with a spatula for an even surface.

Bake in the preheated oven for approximately 40 minutes or until a toothpick inserted into the center comes out clean.

Allow the gingerbread cake to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Once the cake has cooled, brush maple syrup liberally on top. Slice and serve. Top each slice with a few pomegranate arils (optional).
