These beautiful spring rolls are so fresh and vibrant. The sprouts and other healing foods in these rolls will revive you, body and spirit. You can make these with brown rice wrappers or choose nori sheets for a grain-free option. Just as you can choose the wrap, you can also choose between avocado, mango, sweet potato, or potato for the filling, depending on what works best for you. Tailor this recipe to suit your personal tastes and needs.

Directions:
Begin by soaking the rice papers (if using) in water until they become pliable. If you’re using nori sheets, place them shiny side down on a clean countertop or chopping board.
Arrange a generous handful (about a cup) of sprouts on one end of the rice paper or nori sheet. Add a few pieces of tomato, some chopped spring onion or chives, avocado slices (or mango slices or batons of sweet potato or regular potato), and dulse strips (if using).
If you opted for rice paper, fold the sides of the paper inward to enclose the filling, then roll it up tightly, similar to a burrito. If using nori sheets, arrange the ingredients on one end of the sheet. Wipe a couple drops of water or lime (or lemon) juice across the other end of the sheet, then roll up tightly.
Repeat the process until you’ve used up all the filling ingredients.
To make the dipping sauce, whisk together all the sauce ingredients until smooth.
Once your rolls are assembled, carefully cut each one in half. Serve immediately with the dipping sauce.
