Sweet Potato & Greens Salad

The combination of crisp leafy greens and warm sweet potato with optional crunchy vegetables and a bright sweet lemon dressing makes this a salad that’s easy to enjoy. Serve it up for lunch, dinner, or even breakfast! Enjoy it for yourself as a meal or share it with others as a side. You may want to double the recipe.

Sweet potatoes are also phytoestrogenic and perform the vital function of ridding the body of unusable, destructive, cancer-causing estrogen that interferes with the body’s hormone function.

Leafy greens hold precious and vital mineral salts, partially composed of a group of cofactors associated with sodium, such as trace bioavailable iodine, chromium, sulfur, magnesium, calcium, potassium, silica, manganese, and molybdenum, which are critical for neurotransmitter and neuron support, and are also the fundamental basis of building electrolytes.

Sweet Potato & Greens Salad

Ingredients:

  • 3 cups sweet potatoes of any variety, diced
  • 1 cup chopped romaine lettuce
  • 1 cup arugula
  • 1 cup baby spinach

Other toppings options:

  • 1 cup diced cucumber
  • 1/3 cup thinly sliced red onion
  • 2 stalks / 1/2 cup finely diced celery

Dressing:

Directions:

Place the diced sweet potatoes in a steamer or colander set over a pan of boiling water. Cover with a lid and steam for 8 minutes, until tender and cooked through but still holding their shape. Set aside to cool for 2-3 minutes.

Arrange the romaine, arugula, and spinach on a large serving platter or salad bowl and add the sweet potatoes, cucumber, red onion and celery.

Make the dressing by whisking together the lemon juice, maple syrup, thyme, paprika, and mustard powder. Add black pepper if you wish.

Pour the dressing over the salad and toss gently to coat. Serve immediately.
