Wild Blueberry Banana Oat Cookies
Ingredients:
- 2 ripe bananas
- 2 tablespoons pure maple syrup (optional)
- 2 cups gluten-free oats
- 1/2 cup dried wild blueberries
Directions:
Preheat the oven to 350°F/180°C and line a baking sheet with parchment paper.
In a large mixing bowl, mash the bananas with a fork until smooth. Stir in the maple syrup, if using. Add the oats and dried wild blueberries to the bowl and mix thoroughly until everything is well combined.
Scoop out the mixture using a heaping tablespoon measure—you should get about 16 cookies. Place them on the baking sheet and flatten them slightly to make discs.
Bake for 15 to 20 minutes, until the edges turn golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Store in an airtight container.
